With Christmas just around the corner, I wanted to try my hand at a cake roll that would be suitable for any holiday gathering or just to enjoy for yourself, this cake will not disappoint! It features a moist gingerbread sponge cake that's filled with a white chocolate cheesecake mousse and topped with a white chocolate cremeux for a combination that's warm, cozy and inviting! (plus the chocolate goes really well with the gingerbread!) I even added some extra mousse on the outside and glazed with with some milk chocolate and topped with it some leftover decorations from previous projects to transform it into a swiss roll that's similar in style to a Buche de Noel! But feel free to leave the swiss roll plain if you prefer to keep things simple! Don't want to listen through the whole explanation behind the recipe? Not a problem! the Tutorial begins at 03:03! (227g) full fat cream cheese, at room temperature 4 oz. (113g) white chocolate, melted 6 tbsp (47g) icing sugar, sifted 1 1/2 tsp pure vanilla extract or vanilla bean paste 3/4 cup (180ml) heavy cream, chilled + whipped to soft peaks For the Cinnamon White Chocolate Cremeux 2 tsp (6g) unflavoured gelatine powder, bloomed with 4 tsp (20ml) of water 1/2 cup (120ml) heavy cream, warmed 1/2 cup (120ml) whole milk, warmed 1 tbsp (16g) light corn syrup 3 large egg yolks, at room temperature 6 oz. (170g) white chocolate, chopped 1/2 tsp cinnamon Pinch of salt For the white chocolate mousse (to coat the outside of the Swiss roll; optional) 4 oz. (113g) white chocolate, chopped 2 tbsp + 2 tsp (40ml) heavy cream, warmed 1/2 cup (120ml) heavy cream, chilled + whipped to medium peaks For the milk chocolate glaze (to coat the outside of the Swiss roll; optional) 6 oz.
