This video will show you on how to make "Mango Cheesecake" easily using the ingredients which are readily available at local stores. I have also substituted gelatin with agar-agar powder which is easily available at home, without compromising on the taste! The mango cheesecake is a rich and decadent cake. I have modified the recipe slightly as some ingredients are not easily available. To make the base, I have used Digestive Biscuits. You can replace them with graham crackers, marie biscuits or even Nestum! As for the mangoes, you can choose any of your favourite variety! Upon adding the melted butter, if the mixture is too wet, add more dry ingredients. I f the mixture is too dry, add more melted butter. I prefer my crust to be only at the bottom of the cake. I f you like more crust, you can add more ingredients and press the mixture about 2 cm against the sides of the baking pan. When making the cheesecake itself, ensure to use a spatula to scrape the sides of the mixing bowl as everything should be beaten into a creamy mixture. I have used an 8-inch baking pan. If you prefer a taller cake, feel free to use a smaller baking pan. However, ensure to use a springform baking pan with a removable or detachable bottom. Finally, ensure that there is enough setting time to chill every layer and afterwards. You can and should bake the cheesecake a day or two earlier to enhance its taste! Happy baking!!!
