On rainy days we bake ♡ This time I was craving my go-to bakery style double chocolate muffins recipe. These muffins are so rich and moist, and of course bursting with chocolates! Bakery Style Double Chocolate Muffins (Makes 12)🍫✨ 2 large eggs 180 g (¾ cup) milk 120 g (½ cup) greek yogurt / sour cream 150 g (½ cup + 2 tbsp) vegetable oil 2 tsp vanilla 240 g (2 cups) all purpose flour 50 g (½ cup) cocoa powder 200 g (1 cup) white granulated sugar 1 tsp baking soda ½ tsp salt 250 g (1.5 cups) dark chocolate chips -Preheat the oven to 220°C (428°F). Line a muffin pan with paper liners. -In a mixing bowl, whisk together the eggs, milk, yogurt (or sour cream), oil, and vanilla until smooth and well combined. -Sift in the flour, cocoa powder, sugar, baking soda, and salt. Gently fold until just combined. -Fold in the chocolate chips, saving a few to sprinkle on top for that bakery-style look. -Scoop the batter evenly into your muffin liners, filling them almost to the top to achieve that domed top! -Bake at 220°C (425°F) for 5 minutes. Then, without opening the oven door, reduce the temperature to 180°C (350°F) and bake for another 15–17 minutes, or until a toothpick inserted in the center comes out clean. -Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely (or enjoy warm!).
