For the past few months, I’ve received so many requests for easy dinner recipes, so today I’m sharing one of my absolute favorites, baked parmesan chicken! This simple yet delicious dish is perfect for a quick family meal. It only takes about 10 minutes to prep, and while the chicken bakes, I usually prepare the sides. In just 45 minutes, dinner will be ready to serve. I really hope you enjoy one of our favorite recipes. If you try it please let us know what you think in the comments! Baked Parmesan Chicken Ingredients: 3 boneless, skinless chicken breasts, cut thin and diced 1 1/2 cups grated Parmesan cheese 1/3 cup plain Greek yogurt 1/3 cup mayonnaise 2 cloves garlic, minced finely 1/2 teaspoon salt 1/2 teaspoon black pepper 1/2 teaspoon red pepper flakes (optional) 1/2 teaspoon onion powder Instructions: Preheat your oven to 350°F (175°C). In a bowl, combine the Greek yogurt, mayonnaise, minced garlic, salt, pepper, red pepper flakes, and onion powder. Dip the diced chicken into the yogurt mixture, making sure it’s fully coated. Then, coat the chicken in the grated Parmesan cheese. Place the coated chicken pieces on a broiler pan or a pan with a rack. Bake at 350°F for 25 minutes or until the internal temperature of the chicken reaches 165°F. After 25 minutes, continue baking for an additional 5 minutes, or until the Parmesan cheese is golden brown and crispy. Creamy Mashed Potatoes Ingredients: 3-4 lbs potatoes, peeled and diced 1 teaspoon salt (for boiling) 4 - 6 oz cream cheese 4 tablespoons butter Salt (to taste) Pepper (to taste) Instructions: Boil the peeled and diced potatoes in a large pot of water with 1 teaspoon of salt. Once the potatoes are tender, drain them well. Add cream cheese and butter to the potatoes. Season with salt and pepper to taste. Mix everything together until smooth and well combined. Garlic Parmesan Green Beans Ingredients: 1 tablespoon butter 1 clove garlic, minced finely 1 bag frozen green beans 1/4 cup Parmesan cheese Instructions: In a large skillet, melt 1 tablespoon of butter over medium heat. Add the minced garlic and sauté until fragrant. Add the bag of frozen green beans to the skillet and cook on medium heat, stirring every few minutes, until the beans are heated through and tender. Top with 1/4 cup of Parmesan cheese and allow it to melt before serving.
