Recipe Card: Amla Pickle (आंवले का अचार) Preparation Time: • Prep Time: 15 minutes • Cooking Time: 25 minutes • Resting Time: 24-48 hours Servings: 1 medium jar (approx. 10 servings) Calories per Serving: ~70 kcal Ingredients: For Cleaning & Cutting: • 2 grams gooseberries (amla) • Water (for washing) For Spice Powder: • 1 teaspoon fenugreek seeds (methi dana) • 1 teaspoon mustard seeds (rai) For Frying Gooseberries: • 1/4 cup sesame oil (til ka tel) For Tempering: • Sesame oil (from frying) • 1 teaspoon mustard seeds (rai) • 2 dry red chillies (sukhi lal mirch) • 10-12 garlic pods (lehsun) • 2 stems curry leaves (kadi patta) For Mixing: • Fried gooseberries • 1/4 cup red chilli powder (lal mirch powder) • 1/8 cup salt (namak) • Prepared mustard & fenugreek powder Instructions: 1. Clean and Prep Gooseberries: • Wash gooseberries thoroughly with water to remove dirt. • Wipe them dry, let them air-dry for some time, and cut into small pieces, removing the seeds. 2. Make the Spice Powder: • Dry roast fenugreek and mustard seeds in a pan until fragrant. • Grind them into a fine powder and set aside. 3. Fry the Gooseberries: • Heat 1/4 cup sesame oil in a pan. • Add the cut gooseberries and fry on low flame for 10 minutes until they turn soft and golden. • Remove them from the pan and allow them to cool completely. 4. Prepare the Tempering: • In the same oil, add mustard seeds and let them crackle. • Add dry red chilies, garlic pods, and curry leaves. • Fry until the onions are golden and the chilies change color. • Let the tempering cool completely. 5. Mix the Pickle: • Take a clean glass bowl and add the fried gooseberries. • Mix in red chili powder, salt, and the prepared mustard-fenugreek powder. • Add the cooled tempering to the bowl and mix thoroughly. 6. Rest and Serve: • Allow the pickle to rest in the refrigerator for 24-48 hours to let the flavors blend perfectly. • Serve with steamed rice, paratha, or roti for a tangy and flavorful experience!
