Bonjour friends, How have you been? The weather is very sunny lately, I make the best of it by going to pick strawberries on the coastline, with a gorgeous view and the sound of waves in the background. I made a classic French strawberry tart with them and also some homemade jam that I shared with my loved ones. Crust : 250g Flour 125g Butter 1 Egg 80g Sugar A pinch of salt. 750g Strawberries Pastry cream: 500ml Milk 4 Eggs Yolk 100g Sugar 1 Tbps vanilla extract 60g Flour A pinch of salt For the crust : In a large bowl, mix together the egg and sugar until it lightens in color. Add the flour in one go and mix gently with your fingers until incorporated. Add the softened butter and work gently until it forms a ball. Let it rest for at least 30 minutes. For the pastry cream : First heat the milk, vanilla and salt in a pan. Then in a bowl mix together the yolks and the sugar and whisk until it lightens in color. Add the flour in one go and gently mix until fully incorporated. Add the hot milk gradually, once the milk is all gone, put the mix back on the fire on low heat and whisk constantly until it thickens. Let it completely cooled before adding it to the tart. Once the tart crust has rested enough, roll it gently on a floured surface and put it in a tart tin ( about 30 cm of diameters) Cut the excess crust and bake it in the oven at 180°Celsius for about 15/20 minutes until lightly golden.
