Vegetarian sausage roll made with red lentils and roasted sweet potato, wrapped in puff pastry with sesame seeds. Really tasty recipe, have a go at the homemade ketchup recipe below with them. It takes them to a whole new level! Happy cooking 👌✌👨🍳 For the Sausage rolls: You will need 1 medium sized sweet potato - roasted @160C / 320F for about 40mins 1 medium carrot - grated 1 medium onion - diced 2 cloves of garlic - crushed 1 Tsp dried ground chilli powder 1 Tsp dried ground cumin 1 Tsp dried ground coriander 1 Tsp dried ground tumeric 1 Tsp dried ground curry powder 1 Tsp dried ground ginger 1 Tbsp dried mixed herbs 1 Vegetable stock cube 2 Thumb sized piece of Parmesan 1 Roll store bought puff pastry 170ml or 3/4 Cup Water For the ketchup: You will need 12 tomatoes, roughly chopped 55ml or 1/4 Cup of olive oil 2 shallots, sliced 1 garlic clove 1 sprig of fresh thyme 3 tbsp of vinegar 1 tbs of brown sugar 1 pinch of salt 1 pinch of black pepper 1 tsp allspice 2 tbsp tomato puree 1 tsp ground cinnamon Tabasco sauce to taste Spread all the ingredients onto a baking tray. Place in the oven @ 160C / 320F and cook for approximately an hour and a half. Stirring regularly. After that time the moisture will have evaporated and the tomatoes will have dried out and slightly roasted. Remove from the oven and blitz in a blender, then press the sauce through a fine sieve into a bowl.
