I also share organization tips and time-saving methods to make prepping easier. ✨ From-scratch freezer breakfasts ✨ High-protein, family-friendly meals ✨ Realistic homemaking for busy moms 🍪 Chocolate Chip Muffins (Makes 12) Soft, lightly sweet, classic bakery-style Ingredients 1 ¾ cups all-purpose flour (or half whole wheat, half AP) ½ cup coconut sugar or organic cane sugar 1 tsp baking soda ½ tsp baking powder ½ tsp salt 1 tsp cinnamon (optional but recommended) 2 large eggs ½ cup plain Greek yogurt or sour cream ⅓ cup melted butter or avocado oil ⅓ cup milk (any kind) 1 tsp vanilla extract ¾ cup chocolate chips 🫐 Blueberry Muffins (Makes 24) Fluffy, lightly sweet, packed with fruit Ingredients 4 cups all-purpose flour 1 cup coconut sugar or organic cane sugar 2 tsp baking powder 1 tsp baking soda 1 tsp salt 2 tsp cinnamon 4 large eggs 1 cup plain Greek yogurt ¾ cup melted butter or avocado oil ¾ cup milk 2 tsp vanilla extract 2 ½ cups fresh or frozen blueberries 1 tbsp flour (for tossing blueberries) 🍫 Double Chocolate Muffins (Makes 12) Rich, moist, brownie-like but not overly sweet Ingredients 1 ½ cups all-purpose flour ½ cup unsweetened cocoa powder ½ cup coconut sugar or organic cane sugar 1 tsp baking soda ½ tsp salt 2 large eggs ½ cup plain Greek yogurt ⅓ cup melted butter or avocado oil ½ cup milk 1 tsp vanilla extract ¾ cup chocolate chips Instructions For all muffins: Preheat oven to 375°F. Line a 12-cup muffin tin. Whisk dry ingredients together.In another bowl, whisk eggs, yogurt, butter/oil, milk, and vanilla. Combine wet and dry ingredients gently. Fold in chocolate chips , or blueberries depending on recipe .Divide batter evenly (about ¾ full).Bake 18–20 minutes until a toothpick comes out clean.Cool 10 minutes before removing.
