Apple Filling: 6 medium apples (Granny Smith, Golden Delicious, Honeycrisp), peeled and cut into 1/4 to 1/2 inch thick slices 1 cup water 1/3 cup packed brown sugar 1 tablespoon cornstarch 1 tablespoon freshly squeezed lemon juice 1/2 teaspoon pure vanilla extract 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1/8 teaspoon ground allspice 1/8 teaspoon table salt Crust: 1 cup self-rising flour 1 cup white sugar 3/4 cup buttermilk 5 tablespoons unsalted butter, melted and cooled Ground cinnamon, for topping Ellen’s Magic: You may use all-purpose flour just add in 2 teaspoons baking powder and 1/4 teaspoon table salt. Preheat the oven to 350 degrees. Lightly spray a 9×13-inch baking pan with cooking spray and set aside. For the Apple Filling: In a large pot over high heat, add and stir together the brown sugar, water, cornstarch, lemon juice, vanilla extract, cinnamon, nutmeg, allspice, and salt until well combined. Add and stir in the apple slices then bring to a boil. When it comes to a boil, reduce the heat to medium to medium-low and cook until fork tender about 5 to 10 minutes, stirring occasionally. Pour the cooked apples into the prepared baking pan and spread evenly. For the Crust: In a large bowl, add and whisk together the flour, sugar, (baking powder and salt, if using). Add and stir or whisk in the buttermilk and melted butter, just until blended (be careful not to over mix). Pour the batter over the apples in the pan and spread evenly and gently. Sprinkle with cinnamon on top. Bake for 40 to 45 minutes. Remove the cobbler from the oven and cool on wire rack for about 15 minutes. Serve with vanilla ice cream and fresh apple slices (if desired) and enjoy! Previous Video - Buttermilk Mashed Potatoes: • Buttermilk Mashed Potatoes - Buttermilk Ma...
