Shinwari Mutton Karhai Serves 3-4 Recipe in English: Ingredients: -Pani (Water) ½ Cup or as required -Lehsan paste (Garlic paste) 1 tbs -Mutton mix boti ½ kg -Cooking oil ½ Cup -Tamatar (Tomatoes) peeled 250 gms -Namak (Salt) 1 tsp or to taste -Kali mirch (Black pepper) crushed 1 tsp -Hari mirch (Green chilies) 5-6 -Adrak (Ginger) julienne -Hara dhania (Fresh coriander) Directions: -In wok,add water,garlic paste and mix well. -Add mutton mix boti and mix well until changes color. -Cover and cook on medium low flame for 20-25 minutes then cook on high flame for 8-10 minutes. -Add cooking oil,mix well for 2 minutes and cook on high flame until oil separates. -Add tomatoes (cut in two halves),cover and cook on low flame until tomatoes are soft. -Mix well and cook on high flame for 4-5 minutes. -Add salt and black pepper crushed,mix well and cook until oil separates. -Add green chilies and mix. -Add ginger,fresh coriander & serve. Recipe in Urdu: Ajza: -Pani (Water) ½ Cup or as required -Lehsan paste (Garlic paste) 1 tbs -Mutton mix boti ½ kg -Cooking oil ½ Cup -Tamatar (Tomatoes) peeled 250 gms -Namak (Salt) 1 tsp or to taste -Kali mirch (Black pepper) crushed 1 tsp -Hari mirch (Green chilies) 5-6 -Adrak (Ginger) julienne -Hara dhania (Fresh coriander) Directions: -Karhai mein pani aur lehsan paste dal ker ache tarhan mix karein. -Mutton mix boti dal dein aur rang tabdeel hunay tak ache tarhan mix ker lein. -Dhak dein aur halki darmiyani ancch per 20-25 minutes kliya paka lein phir tez ancch per 8-10 minutes kliya paka lein. -Cooking oil dal ker 2 minutes kliya ache tarhan mix karein aur tez ancch per oil alag hunay tak paka lein. -Tamatar (cut in two halves) dal ker dhak dein aur halki ancch per tamatar naram hunay tak paka lein. -Ache tarhan mix karein aur tez ancch per 4-5 minutes kliya paka lein. -Namak,kali mirch crushed dal ker ache tarhan mix karein aur oil alag hunay tak paka lein. -Hari mirch dal ker mix karein. -Adrak aur hara dhania dal ker serve karein.
