Here is a recipe for Aate ka Halwa (whole wheat flour pudding) in English, also known as Kada Prasad, which is a popular Indian dessert. This recipe uses equal proportions of the main ingredients for a rich, traditional taste. Ingredients:- 1 cup Whole Wheat Flour (Atta) 1 cup Ghee (clarified butter) 1 cup Sugar 3 cups Water 1/2 tsp Cardamom powder (optional, but recommended) 2 tbsp Chopped mixed nuts (almonds, cashews, pistachios) for garnish (optional) Instructions:- Prepare the sugar solution:- In a separate saucepan, bring the water to a boil and stir in the sugar until it is completely dissolved. You can also add the cardamom powder to this solution for flavor. Keep the syrup hot or warm. Roast the flour:- In a heavy-bottomed pan or kadai, melt the ghee over medium-low heat. Add the whole wheat flour and mix well, ensuring no lumps are formed. Cook the flour:- Roast the flour in the ghee, stirring continuously to prevent burning. Continue cooking on a low to medium flame for about 12-15 minutes, or until the flour turns a rich, dark golden brown color and releases a nutty, aromatic smell. The final color of your halwa depends on how well you roast the flour. Add the liquid:- Once the flour is well-roasted, carefully pour the hot sugar solution into the flour mixture while stirring continuously. Be cautious as the mixture will splutter significantly. Cook to consistency:- Keep stirring until the flour absorbs all the water and the halwa starts to thicken and leaves the sides of the pan, with the ghee beginning to separate (about 5-7 minutes). Finish and serve:- Stir in the chopped nuts and mix well. Remove from heat and transfer the halwa into serving bowls. Serve hot or warm. For a richer halwa, you can replace the water with milk, or a combination of both. Enjoy this simple and satisfying traditional dessert!
