Chicken Enchilada Casserole🧀 WW Friendly | Lightened Up Recipe |Weight Watchers-With Calories & Macros- I tried out a new WW recipe that I made a few changes to, to lower the points and make it more to our liking! Ingredients: Enchilada sauce mix (the recipe called for the packet, I used this recipe ➡https://www.food.com/recipe/dry-enchi... 6 oz Canned tomato paste 6 1/3 cups Water, divided 10 oz Cooked skinless boneless chicken breast, chopped 1 cup Yellow cornmeal Canned black beans, 15oz, rinsed and drained Canned yellow corn, 15oz, drained 1 1/2 cups shredded, reduced fat fiesta blend cheese (I used Great Value) 1 onion, chopped 1 med red pepper, chopped 1/2 medium Green pepper, chopped 1 tsp minced Garlic 1Tbsp Olive oil Cooking spray Prepare enchilada sauce by adding 3 cups water, tomato paste, and enchilada mix and stir together in a small pan. Stir and let come to a simmer. Continue to simmer for about ten minutes. In a large saucepan heat olive oil over medium heat. Add onion, pepper and garlic. Cook, stirring until translucent, about 5 minutes. Remove roughly 2/3 of onion mixture and place in a large mixing bowl; set aside. Stir 2 cups of water into remaining onion mixture in the pan, and let it come to a boil. Add beans, corn and chicken into reserved onion mixture and mix together. In another medium bowl, add cornmeal to remaining 1 1/3 cups of water and stir to combine. Gradually add cornmeal mixture to boiling water-onion mixture. Cook over low heat, stirring constantly, until cornmeal is thickened, about 5 minutes. Spray a 9 X 13 baking dish with cooking spray. Spread cornmeal mixture evenly over bottom of dish. Spread half of enchilada sauce over cornmeal layer. Top with all of bean mixture and then remaining enchilada sauce. Add the cheese evenly to the top. Bake until heated through and cheese is melted, about 45 minutes. Makes 8 servings. WW Points per serving - 6 PTs.
