Ingredients Desi Ghee: 1/2 Cup (Room temperature) Powdered Sugar: 1/2 Cup Vanilla Essence: 1/2 Teaspoon (Optional) All-Purpose Flour (Maida): 1.5 Cups Baking Powder: 1 Teaspoon Milk Powder: 2 Tablespoons Milk: 1 to 2 Tablespoons (As needed for the dough) Food Coloring: Orange and Green Step-by-Step Instructions Creaming: In a mixing bowl, combine the desi ghee and powdered sugar. Whisk them together vigorously until the mixture becomes white, light, and fluffy (like whipped cream). Mix in the vanilla essence. Dry Ingredients: Using a sieve, sift the flour and baking powder into the creamed ghee mixture. Add the milk powder. Dough Preparation: Gently mix the ingredients with your hands until they resemble breadcrumbs. Add 1-2 tablespoons of milk gradually to bind everything into a soft dough. Do not over-knead. Coloring: Divide the dough into three equal portions. Add orange food color to one, green to another, and keep the third one white. Layering: Roll out each colored dough into a flat sheet (about 1/4 inch thick). Stack them on top of each other in the order of the national flag (Green, White, and Orange). Press gently so they stick together. Chilling: Roll the stacked layers into a tight log. Wrap it tightly in butter paper and refrigerate for 30 minutes to firm up. Slicing: After 30 minutes, remove the log from the fridge and slice it into even rounds (cookie shapes) using a sharp knife. Baking: Grease a plate with oil and place the cookies on it with some space in between. Place the plate in a pre-heated heavy-bottomed pan (Kadai) and bake for 15 minutes. For a smoky flavor, you can flip them halfway through. Cooling: Once baked and golden, let them cool down to become crunchy. Shorts Descriptions (English) Shorts Option 1: The Dough & Colors Cream 1/2 cup ghee and 1/2 cup sugar until fluffy. Fold in 1.5 cups flour, 1 tsp baking powder, and 2 tbsp milk powder.
