Ingredients: 6 slices of bread 2 cups of water ½ cup + 2 tablespoons sugar, divided 2 cups of milk ½ cup milk powder ¼ teaspoon cardamom powder Ghee for frying A few drops of lemon juice A pinch of saffron (optional) Instructions: Prepare the Bread: Cut the bread slices into bite-sized cubes. Fry the Bread: Heat ghee in a deep pan. Deep-fry the bread cubes until golden brown and crisp. Remove and set aside on a paper towel to drain excess ghee. Make the Sugar Syrup: In a large pot, bring 2 cups of water to a boil. Add ½ cup sugar and stir until fully dissolved. Add a few drops of lemon juice to prevent crystallization. Soak the Bread: Dip the fried bread cubes into the sugar syrup for no more than 5 seconds to slightly soften them, then immediately remove and set aside. Prepare the Milk Mixture: In a separate pan, combine milk, 2 tablespoons of sugar, milk powder, and saffron (if using). Stir continuously over medium heat until the milk thickens slightly. Add Flavors: Stir in the cardamom powder into the thickened milk mixture. Assemble the Shahi Tukra: Place the soaked bread cubes in a serving dish. Pour the warm, thickened milk mixture over the bread ensuring they are well coated. Serve: Serve warm or chilled, garnished with nuts or dried fruits if desired.
