One Sheet Pan Pork Chops w/ Butternut Squash Sweet Potatoes & Apples - Easy Dinner When You Don't Want to Cook: Making one cheap dinner that's gonna knock your socks off on a night you don't want to cook. This is what not wanting to cook tonight looks like - very quick and easy one sheet dinner. Everything on this plate is a match made in heaven. Start with butternut squash and pop it in microwave for five minutes to soften it up making it easier to cut and peel. Game changing trick because people don't like buying butternut squash whole because they find it so hard to cut. Cut root end off - see how easy that was when not fighting with rolling around butternut squash. Cut other end off then cut where long piece meets wider end. Seeds come out much easier when you microwave it too. Peel - so much easier when skin is just a little bit warm. You could buy butternut squash already cut and peeled in grocery store but it is significantly cheaper to buy whole butternut squash and do it yourself. Takes two minutes especially with this microwave trick. Cut into one inch pieces keeping everything even size so everything cooks at same time. Cut and dump directly into bowl. Sweet potato same exact thing - cut into one inch rounds, cut rounds into sticks, cut sticks into dices, dump in bowl. For protein use pork chops. If you're from the 70s and 80s what goes better with pork chops than applesauce. But not using applesauce - using apples because apples, sweet potatoes, and butternut squash are like partners in crime. Use honeycrisp or any apple.
