Ok, ok...so I'VE told you this before, but peony harvest is a lot of work and it all comes down to TIMING! While yes, they can be one of the most profitable flowers we grow, you also have some other things to consider, such as bloom times, cooler space, hiring labor to help harvest (if you're doing this full time and growing more than a couple hundred peonies you'll need help to get them cut in time!) In this video we go over some of my favorite varieties, harvest timing, and some other behind-the-scenes details! 4:14: harvest timing 6:16: pinch or not pinch side shoots? 8:26: how many to harvest 10:19: profitability considerations 11:36: some of my favorite varietals 12:46: making peony bouquets PEONY SIMPLE SYRUP (the darker pink the petals, the prettier the color will be--and use the very fragrant peonies for this!) 4 peony flowers, petals only 3 cups of water 2 - 3 cups of sugar juice of 1/2 lemon Add the water to a pot and bring to a boil. Once the water has boiled, remove from the heat. Add the peony flower petals to the water and give it a gentle stir to make sure all the petals are submerged. Cover and allow to steep overnight. The next day, strain through a mesh strainer or cheesecloth. Store in a closed jar for up to a month in the fridge.
