METHOD FOR RICE Heat oil and butter, add whole spices with chopped onion, fry until soft, addgarlic and all the spices with chopped tomato, fry for 5 mins, add blended tomatoes and yogurt, cook until mixture thick, add water and salt, when water boils add soaked rice, cover and cook till done, leave it on dum, lastly add chopped coriander leaves, serve with BBQ skewers and chutney. Mango Tamarind Chutney: Ingredients Tamarind 250 gm with seeds (soaked and pulp removed) Water 2 cups Semi ripe mango 1 medium grated Brown sugar 8-10 tbsp Garlic 2 cloves Soft dates 8 Ginger 1 tbsp grated Vinegar 1 tbsp Ketchup 1 tbsp Crushed red pepper 2 tbsp Salt 1 tsp METHOD Put all the ingredients in tamarind pulp, blend until smooth.
