Recipe in English: Ingredients: -Dhania powder (Coriander powder) 1 tbs -Himalayan pink salt ½ tbs or to taste -Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp -Kali mirch powder (Black pepper powder) 1 tsp -Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs -Lemon juice 2-3 tbs -Chicken tikka pieces 1 kg -Tamatar (Tomatoes) 3 medium -Hari mirch (Green chillies) 3-4 -Lehsan (Garlic) cloves 3-4 -Cooking oil 2-3 tbs -Cooking oil ¼ Cup -Hari elaichi (Green cardamom) 2-3 -Sabut kali mirch (Black peppercorns) 8-10 -Laung (Cloves) 2 -Pyaz (Onion) sliced 3 medium -Zeera (Cumin seeds) roasted & crushed ½ tbs -Ajwain (Carom seeds) ½ tsp -Darchini powder (Cinnamon powder) ¼ tsp -Javitri powder (Mace powder) ¼ tsp -Tikka masala 1 & ½ tbs -Garam masala powder ½ tsp -Water ½ Cup or as required -Water ½ Cup or as required -Hara dhania (Fresh coriander) chopped Direction: -In a dish,add coriander powder,pink salt,kashmiri red chilli powder,black pepper powder,ginger garlic paste,lemon juice & mix well. -Add chicken pieces & coat well,cover & marinate for 1 hour. -Thread tomato,green chillies,garlic into skewer & fire roast on direct flame until charred & remove charred skin. -In blending jug,add roasted tomato,green chillies,garlic,blend well & set aside. -In frying pan,add cooking oil,marinated chicken & cook on low flame from both sides for 3-4 minutes,cover & cook on low flame for 5-6 minutes & set aside. -In frying pan,add cooking oil,green cardamom,black peppercorns,cloves & mix well. -Add onion,mix well & fry until golden. -Add blended paste,cumin seeds,carom seeds,cinnamon powder,mace powder,tikka masala,garam masala powder,mix well & cook until oil separates (2-3 minutes). -Add water & mix well,cover & cook on low flame for 4-5 minutes then cook on high flame until oil separates. -Add water & mix well. -Now add cooked chicken pieces,pour gravy,cover & cook on low flame until chicken is tender (12-15 minutes). -Add fresh coriander & serve! Recipe in Urdu: Ajza: -Dhania powder (Coriander powder) 1 tbs -Himalayan pink salt ½ tbs or to taste -Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp -Kali mirch powder (Black pepper powder) 1 tsp -Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs -Lemon juice 2-3 tbs -Chicken tikka pieces 1 kg -Tamatar (Tomatoes) 3 medium -Hari mirch (Green chillies) 3-4 -Lehsan (Garlic) cloves 3-4 -Cooking oil 2-3 tbs -Cooking oil ¼ Cup -Hari elaichi (Green cardamom) 2-3 -Sabut kali mirch (Black peppercorns) 8-10 -Laung (Cloves) 2 -Pyaz (Onion) sliced 3 medium -Zeera (Cumin seeds) roasted & crushed ½ tbs -Ajwain (Carom seeds) ½ tsp -Darchini powder (Cinnamon powder) ¼ tsp -Javitri powder (Mace powder) ¼ tsp -Tikka masala 1 & ½ tbs -Garam masala powder ½ tsp -Water ½ Cup or as required -Water ½ Cup or as required -Hara dhania (Fresh coriander) chopped Direction: -Dish mein dhania powder,pink salt,Kashmiri lal mirch powder,kali mirch powder,adrak lehsan psate aur lemon juice dal ker ache tarhan mix ker lein. -Chicken pieces dal ker ache tarhan coat karein aur 1 hour kliya marinate ker lein. -Tamatar,hari mirchein aur lehsan ko skewer per laga lein aur direct flame per charred ho janay tak fire roast ker lein & charred skin ko remove ker lein. -Blending jug mein roasted tamatar,hari mirchein aur lehsan dal ker ache tarhan blend ker lein & side per rakh dein. -Frying pan mein marinated chicken dal dein aur halki ancch per dono sides sa 3-4 minutes kliya paka lein phir dhak ker halki ancch per 5-6 minutes kliya paka lein & side per rakh dein. -Frying pan mein cooking oil,hari elaichi,sabut kali mirch aur laung dal ker ache tarhan mix ker lein. -Pyaz dal ker ache tarhan mix karein aur golden ho janay tak fry ker lein. -Bended paste,zeera,ajwain,darchini powder,javitri powder,tikka masala aur garam masala powder dal ker ache tarhan mix karein aur oil alag ho janay tak paka lein (2-3 minutes). -Pani dal ker ache tarhan mix karein aur dhak ker halki ancch per 4-5 minutes kliya paka lein phir tez ancch per oil alag ho janay tak paka lein. -Pani dal ker ache tarhan mix karein. -Ab cooked chicken pieces dal dein aur dahk ker halki ancch per chicken gul janay tak paka lein (12-15 minutes). -Hara dhania dal ker serve karein!
