OKRA SOUP ... Easy Recipe

Okra Soup, also known as "Ila Alasepo" in Yoruba or "Ofe Okra" in Igbo, is a traditional Nigerian dish loved for its unique texture and rich flavor. The soup is made from fresh okra, a highly nutritious vegetable that thickens the dish when chopped or blended. Okra is full of vitamins, minerals, and antioxidants, making this dish both flavorful and healthy. The soup can be prepared with a variety of proteins, such as goat meat, beef, stockfish, and dried fish, giving it a rich depth of flavor. Palm oil is typically added to create a vibrant color and add richness to the dish. Okra Soup is often served with starchy sides like pounded yam, fufu, semovita, or garri, making it a filling and satisfying meal perfect for any occasion. *Ingredients:* 500g fresh okra (chopped or blended) 200g assorted meat (beef, goat meat, or chicken) 100g dried fish and stockfish (optional) 1/2 cup palm oil 1 large onion (chopped) 2-3 seasoning cubes 1 tsp ground crayfish (optional) 1-2 tbsp ground pepper (or fresh pepper) Salt to taste Water (as needed) *Instructions:* 1. Begin by cooking the assorted meats and fish. In a pot, add water, seasoning cubes, and a pinch of salt, then cook the meat until tender. Set aside. 2. In a separate pot, heat the palm oil over medium heat. Add the chopped onions and cook for about 2 minutes, allowing the onions to soften. 3. Add the chopped or blended okra to the pot with the onions and stir. If you prefer a thicker texture, you can blend half of the okra before adding it. 4. Stir in the cooked meats, fish, ground crayfish, and ground pepper. Let it simmer for about 5-10 minutes. 5. Add water to your desired consistency and allow it to cook for an additional 10 minutes. Adjust the seasoning with salt or more seasoning cubes to taste. 6. Serve your Okra Soup hot with your favorite side dish such as pounded yam, fufu, or semovita.
