For anyone familiar with Authentic Irish Soda bread, this is not it. Authentic Irish soda bread is usually brown and dry where my Grandma's Irish Soda Bread is buttery and sweet. There is no soda or even baking soda in this bread. In fact I'm not even sure if this can be considered bread because it has no yeast. Anyways this is an authentic Irish recipe brought over by my great grandmother but the authentic name for this bread is not family friendly so my family has always called it Irish Soda Bread. This is one of my favorite recipes and really easy to make Grandma's Irish Soda Bread. Prep: 20min Bake: 1 hr 4 cups Flour 1 cup Sugar 4.5 tsp Baking Powder 0.5 tsp Salt 2 cups Raisins 1 stick of Butter or Margarine 2 jumbo Eggs or 3 large Eggs 1.5 cups Buttermilk -Preheat Oven to 350 degrees Fahrenheit -Grease Loaf sized baking dish with butter ---- -Combine Flower, Sugar, Baking Powder, and Salt in a Large mixing bowl. -Add Raisins and mix until evenly distributed -Slice 1 stick of butter. Mix this into the Dry ingredients leaving large clumps -of butter. -Add remaining wet ingredients and fold until no more dry ingredients remain. ---- Add Batter to Greased Baking Dish making sure to spread batter from the center to the edges. Bake for 1 hour at 350 degrees. Check after 45min. When the top of the Soda Bread is golden brown and knife inserted comes out clean, then the soda bread is complete. Grandma likes to eat with lightly melted butter on top. I enjoy it the way it is.
