This Chawan Mushi (Japanese Egg Custard) is a delicate, silky custard gently steamed with savory dashi. Light yet satisfying, it’s a comforting dish that can be enjoyed either warm or chilled. [3/25/26 Coupon Book] 5 Servings – Total Time: 20 minutes Pair With: Kikusui Junmai Ginjo Sake ______________________________________________ GET COOKIN': 4 eggs 2 tbsp. tsuyu 2 cups prepared dashi 1 pc. fresh shiitake or rehydrated dried shiitake sliced into 5 pieces 5 pcs. small snow peas Crack the eggs into a bowl and whisk gently until combined and slightly frothy. Add the tsuyu and mix well, then slowly drizzle in the dashi while stirring with chopsticks or a rubber spatula to minimize bubbles. Skim off any foam from the surface before dividing the mixture evenly among heat-safe serving vessels. Ceramic or glass containers are ideal, though thick, heat-resistant plastic containers may also be used. Top each portion with one slice of shiitake mushroom and one snow pea. Steam for about nine minutes, until the custard is just set. Serve hot, or chill and serve cold. Chef’s Note: Chawan mushi is sometimes finished with an ankake sauce made by gently heating dashi, thickening it with a potato starch slurry, and seasoning lightly with salt or soy sauce. If storing in the refrigerator, cover tightly with plastic wrap to prevent drying out. The custard can be kept refrigerated for up to six days.
