It’s everything you want in a traditional fruit cake recipe, with a modern, approachable twist. 📌 If you've been searching for the best Christmas cake recipe or want a foolproof guide to mastering a moist, flavorful holiday fruit cake, this video has you covered. 🎄🍰 Turn ON Subtitles To get Your Language! 🎄 🍰 Ingredients: For the fruit mix: Dried Fruits and Nuts 600g (about 4 cups) I used: Raisins, Dried Cranberries, Sultanas, Crystalised ginger, Candied peel, Glazed cherries, Chopped nuts (Pistachios, Cashews) Spices: Cinnamon powder 2 teaspoons All spice 1 teaspoon Ground ginger 1 teaspoon Dark rum (you can use brandy or any suitable liquor) - 60ml (¼ cup) [you can replace the liquor with orange/ grape juice] Golden syrup/ Or Honey - 3-4 tablespoons Jam or Jelly (Any type) - 2-3 tablespoons For the Cake: Plain Flour - 120g (1 cup) Baking powder 1 teaspoon Brown Sugar - 100g (½ cup) Salted Butter - 110g (½ cup) Eggs (medium size) - 3 Measuring cup size - 240ml Baking pan - 25x11x6 cm (3 Lb) loaf pan Method: Add all the dried fruits (without nuts, Crystalised ginger and glazed cherries) into a bowl. Add the spices, the liquor, and golden syrup into the same bowl. Mix well. Cover tightly. Leave in a dark cool place. I left it for 3 days. But can be stored up to a month prior to the cake baking. On the day of the baking, Prepare the cake batter: Add all the dry cake ingredients into a bigger bowl. Mix well. Add the eggs and the butter into the same bowl. Whisk at low speed for about 20-30 seconds. Give it a mix. Whisk again for about 20-30 seconds. Mix it again. Take soaked fruits out. Mix well. Add glazed cherries, nuts, Crystalised ginger and Jam/ jelly and mix well. Now add the fruits into the cake batter. Fold and mix well. Line the baking pan with a few layers of baking papers for a more consistent baking. Add the batter. Now bake in a preheated oven at: 160c (320f) for 30 minutes. The cover the top with a foil and, Bake again at 150c (300f) for about 30-40 minutes. (or until a toothpick comes out clean) Once baked, take out of the oven, let it cool completely. You can cover it well and keep it until the day of serving. (Can keep for few months, in an airtight container, in a cool and dry place) I only kept the cake for 3 days. Tip: To keep the cake moist, brush the cake with, The alcohol you used mixed with honey. You can do this daily if you want, until the day of serving. The white icing layer on the top is optional. I used a shop bought one. Decorate as you wish! You can serve this with whipped cream, just cream, custard, or by itself!
