INGREDIENTS: 3 tbsp oil 1 big onion chopped in think slices 2 bay leaves 1 cinnamon stick 4 cardamoms 3 cloves 4 black pepper corn 1 1/2 tsp ginger paste 2 cups washed meat 2 tsp salt 250ml of water 4 garlic cloves chopped or 1 tsp garlic paste 1/2 tsp turmeric 1 1/2 tbsp mild red mixed masala 1 1/2 tsp coriander powder 1 1/2 tsp mild madras curry powder 2 chopped tomato’s 1 tsp mixed mango pickle (optional) 1 1/2 tsp dry fenugreek 2 chopped potatoes INSTRUCTIONS: 3 tbsp oil 1 big onion chopped in think slices 2 bay leaves 1 cinnamon stick 4 cardamoms 3 cloves 4 black pepper corn 1 1/2 tsp ginger paste 2 cups washed meat 2 tsp salt 250ml of water 4 garlic cloves chopped or 1 tsp garlic paste Let meat curry cook on medium flame for 15 minutes then add the spices 1/2 tsp turmeric 1 1/2 tbsp red mixed masala 1 1/2 tsp coriander powder Add more water just enough for the meat to be fully soaked with the spices. Add your 2 chopped tomato’s. Let simmer for 30 minutes, then stir. Then let sit again, top up on water until it just enough to cover the meat if needed. Then let sit for 5 minutes, add 1 tsp mixed mango pickle (optional). Add 1 1/2 tsp dry fenugreek, add 2 chopped potatoes and stir. Let simmer for 8 minutes. Garnish with fresh coriander and done! Enjoy with a side of rice, naan or any type of bread. Meat curry should cook on medium to low flame for 1 hour. 8 minutes before the 1 hour is done add 2 chopped potato’s for the remaining time and then your curry should be done!
