BACKCOUNTRY PAD THAI Serves 2 Dehydrate veg + tofu at 135F for 8-10 hours Cooking on trail: boil for a minute, let sit for 10 min, add peanuts at the end 4 oz Flat Rice Noodles 1/2 Red Bell Pepper Dehydrated 1/2 Cup Shredded Carrots Dehydrated 1/2 Tsp dried garlic 1/4 Tsp Ginger Powder 2 Tbsp Brown Sugar Soy Sauce (2 To-Go Packets) 2 Tbsp Peanut Butter Powder 1/4 Cup Chopped Roasted Unsalted Peanuts 1/2 cup firm or extra firm tofu dehydrated Tofu directions: Freeze and thaw, season and cook, then dehydrate 135°F (57°C) for 4–8 hours Freezing it opens up air spaces in the tofu through the expansion of frozen liquid inside Dehydrating tofu, without freezing it first, results in tofu that resists rehydration. It will be rubbery and hard. Once ready, you can snap it in half, rather than bend it like jerky.
