Pecan Pantry Pecans: https://thepecanpantry.com use code Karen5 for a 5% discount on your order Breakfast Hash with Potatoes & Eggs Ingredients: 7 slices bacon, or half pound sausage, your choice 2 Tbsp butter 1 small onion, diced 1 bell pepper, diced 3 large potatoes, cubed * 1 tsp garlic powder 1/2 - 1 tsp paprika 1/8 - 1/4 tsp cayenne pepper 1 tsp salt 1/2 tsp pepper 5 eggs parsley chopped diced chives, optional Directions: Cook bacon until golden and crispy. Remove to a paper towel lined plate and set aside. Add butter to grease in pan and let melt. Add peppers and onions, stirring occasionally, cooking until tender. Push vegetables to the side of the pan. Add potatoes and season with salt, pepper, garlic powder, cayenne pepper, and paprika. Mix in the vegetables with the potatoes. Stirring occasionally, cook until potatoes are soft inside and lightly golden on the outside. Make 5 wells in the potatoes. Crack one egg into each well. Salt and pepper eggs to taste. Cover and cook on low to med until eggs reach your desired doneness. Just before your eggs are done to your liking, lay the bacon, or sausage, on top of the potatoes and eggs to warm through. Sprinkle with parsley and/or chives. Serve and enjoy! *optional: parboil potatoes and drain completely to quicken the cooking time in your pan. optional: use frozen cubed hashbrowns or Potatoes O'Brien for a quicker cooking time Fruit Dumplings Ingredients: Berry Mixture: 28 - 30 oz bag frozen mixed berries 1 1/2 cups granulated sugar 4 cups water 1 tsp vanilla extract Dumplings: 2 cups self-rising flour 1 Tbsp sugar pinch salt 8 Tbsp butter, cold, cubed 3/4 - 1 cup milk Directions: Bring berries, sugar, and water to a boil and cook 10-15 minutes. In the meantime, make the dumplings. Stir together flour, sugar, and salt. Cut in butter with a pastry blender. Stir in milk a little at a time forming a stiff dough. On a floured surface, roll out dough to 1/8 - 1/4 inch thickness. Cut into strips about 1 inch wide then cut strips into cubes. Drop dumplings into berry mixture. Do not stir. Gently move dough to the side to add more dumplings if needed. Cook 10 - 12 minutes or until dumplings are done. Gently stir in vanilla extract and cook 1 minute longer. Serve and enjoy!
