Welcome to our December Passport Tasting. This month we’re exploring a stunning Honey-processed coffee from Finca El Mango, part of the family-run collective Café Rivense del Chirripó in Costa Rica’s Brunca region. Founded in 2005 by Régulo Ureña and Isabel Rojas, Café Rivense farms at elevations between 1,500 and 1,650 meters, where the Chirripó microclimate creates exceptional growing conditions. This lot, a mix of Caturra and Catuai, is selectively handpicked, depulped, and dried on raised beds for five to six days before finishing on patios. Rivense is known for its commitment to sustainability and its award-winning quality, including a 5th-place finish in the Cup of Excellence. Tasting Notes Raspberry Semi Sweet Chocolate White Currant Expect a clean and bright cup with lively raspberry acidity, a grounding layer of semi sweet chocolate, and a crisp white currant finish.
