Homemade Everything Bagels in the Anova Precision Oven and F.Blumlein JU2500

I had a craving for bagels and decided to try the "Everything Bagel" recipe that was in the Anova Precision Oven" app. I had picked up some of FreshJax "Brunch Life" everything bagel seasoning not long ago so I thought since these steam ovens are perfect for making them, i would give it a go and see which of these ovens did a better job! I can tell you they both did very good, but the Anova Oven was much easier of course. Everything Bagel Recipe 3 1/2 cups bread flour 1 1/4 cups warm water 2 tsp sugar 2 tsp instant yeast 1 1/2 tsp salt 1 egg white w/ 1 tbs water Everything bagels seasoning mix all of your dry ingredients in a mixer slowly add the water into the bowl while mixing on low mix for 6-8 minutes until the dough pulls away from the sides proof the dough for 40 mins in the oven at 80f with 60% steam remove dough and form into 8 pieces. make into balls and poke your finger in the middle for the hole. spin them into the shape you want. set the oven with sous vide mode on to 212f with 100% steam for 8 mins and bake remove from the oven and pre-heat oven to 392f w/o sous vide mode and 30% steam mix the egg white and water, brush on the bagels and then add the everything seasoning. bake in the oven for another 15 minutes until done.
