Githeri is one of my favourite dish, easy to cook full of nutrients and you can enjoy it at any time of the day just combine it with chilly and avacado and you will live to love it. This is my preferred way of cooking Githeri. To make the cooking faster, you have to boil the beans and maize together earlier . Get Started Save this recipe and keep it for later. Githeri is a very aunthetic Kenyan dish. It is a Kikuyu dish by origin though cooked throughout Kenya. Ingredients 3 servings 400 g boiled maize 600 g boiled beans 4 large Potatoes diced 2 medium sized tomatoes, pureed 1 large onion 3 cloves garlic - finely minced 2 ginger - finely minced Green pepper 1 beef cube 1 tbs vegetable oil 2 large carrots 1 TBS curry powder 1 TBS salt Dhania Steps 1. Heat your sufuria on a medium heat and then add the vegetable oil followed by the onions and cook them until they just turn translucent. 2. Add the diced potatoes and cook them through. 3. Add the ginger and garlic and cook for about a minute and then add the curry powder, which will cook for a minute to cook off the raw taste and aroma. 4. Add pureed tomatoes and beef chilli cube, stir, cover and reduce heat to a low simmer. Cook for about 5minutes or until the mixture reduces and thickens. 5. Add carrots and spring onions then simmer for a minute before adding the maize and beans. 6. Add salt and freshly cracked pepper to taste. 7. Cover and simmer for about 10 minutes for the sauce to thicken and all the flavors to come together. Finally, add the dhania and simmer for just a minute. Turn off the heat and serve.
