This recipe comes from the Martens family, my friends from Minnesota I met years ago. I call it "Britta's recipe" but it originally comes from her mom Vicki. Vicki would always bring this cake to baby showers and church fellowship meals. Britta is the one who shared the recipe with me. I admit I had a hard time choosing between Vicki and Britta. I probably should have called it " The Martens' Scandinavian Cake". I don't know. Feel free to tell me what you think in the comment section. Visit my website for more recipes: https://angeliquecooking.wix.com/french ➡️ RECIPE Ingredients 1 cup sugar 1 egg 1 1/2 tsp almond extract 2/3 cup milk 1 1/4 cups flour 1/2 tsp baking powder 1/2 cup melted butter Powdered sugar Instructions 1 - Preheat oven to 350°F. 2 - In a large bowl, beat together the sugar, the egg, the almond extract, and the milk. 3 - Add the flour and the baking powder and beat until smooth. 4 - Add the melted butter and beat well until doubled in volume and pale. 5 - Pour the batter into a well-buttered almond cake loaf pan (or a 9" round pie dish) and bake for 30 to 40 minutes. 6 - Allow to cool and remove from pan.
