Mike introduces a Saison brewed with dried Saison yeast as well as some spelt in the grain bill. This beer was meant to be dry and quaffable. With a final gravity or 1.004 it certainly is easy to drink and crisp. However, it dried out so much that because it started at 1.066 OG the beer is pushing 8% ABV. Oops. The character of this Saison has a nice balance of lemon and a touch of spicy character supported by a subtle graininess from the Spelt malt. Mike used an extended step mash to get something that was super fermentable. The other great aspect to this saison was the results from using Cellar Science's Saison yeast. This yeast certainly dried out the beer as expected for a saison while also providing a noticable yet manageable amount of lemon and spice character. The end result is a beer that is super drinkable (albeit a little too high on ABV). Recipe below. CHEERS!
