We're combining this legendary South Carolina BBQ sauce with some spare ribs smoked low and slow on a pellet smoker. This Carolina Gold ribs recipe really delivered and I hope you give it a shot! Full disclaimer that we are Arkansas residents and do not have a direct line to a Carolina Gold recipe, so please be understanding that our version may not be exactly in alignment with authentic sauces from the region. We are here to go for it anyway! We hope you enjoy the video and please leave a comment on the video if you liked it or feel we could improve on anything. Sauce Cooking Steps 1. In a saucepan without heat, add all the following ingredients: 1 cup yellow mustard (classic French’s style — the base of the sauce) 1/3 cup apple cider vinegar (tang + brightness) 1/4 cup honey (or brown sugar, for sweetness and body) 2 tbsp ketchup (adds slight depth & umami, but not too much) 2 tbsp Worcestershire sauce (brings savory richness) 2 tbsp melted butter (smooth mouthfeel) 1 tsp smoked paprika (optional, gives warmth & color) 1/2 tsp garlic powder 1/2 tsp onion powder 1/2 tsp black pepper (fresh cracked if possible) 1/4 tsp cayenne pepper (or to taste, for gentle heat) Pinch of salt (start light, taste and adjust — Worcestershire already adds some salt) 2. Turn heat on low and mix ingredients until fully mixed 3. Let cook on low for a few minutes to full warm the sauce, but do not boil. 4. Then let it cool, and bottle until ribs are done Ribs Cooking Steps 1. Remove silver skin from bottom side of ribs 2. Use mustard as binder and apply generous amount of pork rub on bottom side of ribs 3. Flip rack and repeat on top side 4. Let rub adhere for 15-20 min and preheat smoker to 225 degrees 5. Let smoke for 3 hours, and spritz with apple cider vinegar / water mixture every 60 - 90 minutes 6. Pull off when internal temperature of ribs is 175 degrees 7. Wrap with butcher paper, including 3 Tbsp of unsalted butter inside wrap on topside of ribs (see video for visual) 8. Put back on smoker for about 2 hours until internal temperature is around 195 degrees 9. Pull off and unwrap and glaze with Carolina Gold Sauce 10. Put back on smoker for about 30 minutes 11. Pull off and add one last small amount of glaze for final touch 12.
