In this video, we show you how to spatchcock a chicken, make a mojo rub, and smoke the chicken so that you have a crispy, juicy, and tender bird. This chicken had the crispiest skin we have ever had and was full of flavor! We left it on the Weber kettle grill for 2 hours to get the skin extra crispy but it was done an hour and a half to one hour and forty-five minutes into the cook time.
