The Glenallachie Distilling Company is the new venture from Billy Walker, after the sale of the former Benriach Distilling Company and it's stable of distilleries. Aside from a few indi bottlings, Glenallachie has never seen the light of day as a single malt. That's all about to change now however, with a full range of aged releases hitting the market. This 12 year old is a curiously put together Speyside malt, with no refill Bourbon utilized (but some virgin oak). Tim mentions in the video that he is awaiting some more specific information about the precise wood used for maturation, which has subsequently turned up: Only three sources of wood were used for the blend. They were Oloroso Sherry, PX Sherry and Virgin oak (Good remembering Tim!)
