Dry January was watching… so we stirred up trouble anyway. For our very first episode of Stirrin’ Up Trouble, Jessi takes on a chai tea–infused Old Fashioned with toasted marshmallow simple syrup, paired with a homemade red velvet cake with cream cheese icing. The inspiration? Our friend Derek was doing Dry January — no alcohol and no desserts. So obviously, we had to do something about that. With help from Lily and friends, we baked the cake together, then delivered the cake and cocktail ingredients to Derek on January 31 as a little pre–Dry January ending tease. Consider it a friendly reminder that good things come to those who wait… one more day. Jessi's Modifications: We used a kitchen torch instead of the oven broil to have more control on the toasting . Infusing whiskey: Sous Vide two tea bags of Vanilla Chai tea and two cups of whiskey for an hour at 135 degrees. If you don’t have a sous vide place two tea bags and two cups of whiskey together at room temp for 24hrs. Vanilla Chai Old Fashion: Vanilla Chai Infused Whiskey 2oz Toasted Marshmallow Simple Syrup 1oz Squeezed Lemon- 1 Orange Bitters Splash or Two Optional 1 Topping: Put marshmallow fluff in a pipping bag/sandwich bag and pipe the top of drink. For a simpler option, you could rim your glass with the marshmallow fluff. You can toast the top with a kitchen torch and add a dash of all spice on the top. Optional 2 Topping with Whipping Canister: Whip 7oz of marshmallow and 8oz heavy whipping cream till smooth. Add to whipping canister shake well and add one to two chargers. You can torch as well but it will melt a little. This gives it a cream brulee taste that complements the toasted marshmallow in the drink. Both are great toppings! The marshmallow fluff is a thicker, heavier topping that will toast up beautifully. The whipping canister is a lighter, softer topping that can make topping a large group of drinks easier, but doesn’t toast up as well.
