Recipe: 5 egg yolks 1 whole egg 60ml corn oil 90ml milk 100gm cake flour 1/2tsp salt 5 egg whites 1/4tsp cream of tartar 80gm castor sugar 1tbsp red yeast powder 1tbsp warm water 1. Preheat oven to 180c and line cake pan with parchment paper. 2. Mix red yeast powder and warm water to form a paste. Set aside. 3. Using a hand whisk, whisk egg yolks and whole egg till combined. 4. Add in milk and oil then continue to whisk. 5. Add in salt and whisk till everything well combined. 6. Sift in cake flour. Gently whisk till combined. Do not over mix. Set aside. 7. Using an electric hand mixer / stand mixer), beat egg whites till foamy. 8. Add in cream of tartar and gradually add in sugar. Beat till firm peak form meringue. 9. Fold in meringue into egg batter in 3 additions. 10. Portion out 1/3 cake batter. 11. Add in red yeast paste into the 1/3 cake batter and fold it in. Mix well. 12. Scoop alternately 1 big scoop of yellow batter into the center of the cake pan, then 1 small scoop of pink batter onto the center of the yellow batter. Repeat till fill up the pan. 13. Tap the pan on the table to remove air bubbles. 14. Prepare a bigger pan fill with hot water, to bake the cake in water bath method. 15. Bake the cake in center rack at 180c 10mins, 150c 10mins, 110c 55mins and 180c 10mins. (This is the temperature and time that i use. Universal baking time is 160c for 60mins but i highly recommend to bake at least 75mins. Adjust accordingly to your oven's setting). 16. Once done, remove the cake from oven and immediately remove it from the cake pan. 17. Leave it cool completely on a cooling rack.
