INUBARANG MANOK... SPECIAL FILIPINO FOOD IN AKLAN! I finally know how to make this special Aklanon delicacy. A few days before arriving in Kalibo, I asked my friends at Felicita's Rotisserie & Delicacies if I could experience the whole process. With the help of Manong Joel, and Kuya DonDon... I chopped down a young banana tree! Yup, they eat young banana trees here in Aklan! Trimming off layers of the stem, the finished product is known as "Ubad". After chopping it into little bits, I actually tasted the ubad straight up... a watery/earthy flavor. Definitely better when cooked into a dish! Inubarang Manok is a delicious mix of spices, native chicken, coconut milk, and banana stem. I was actually surprised how early on in the process the ubad was cooked… just after sautéing/simmering the chicken. It really does give a unique substance and texture to the dish. One that definitely is enjoyed with rice! In this video we also explore Tigayon Hill, and find ourselves getting ATV's from the Ostrich Farm and taking them along the Aklan River.
