INGREDIENTS👨‍🍳 Potato dough Russet potatoes - 1 kg Salt - 1 tsp Dry potato starch - 1 tbsp Filling Ground pork - 350 g Onion - 1, diced Salt - 1 tsp Black pepper - ½ tsp Parsley - to taste Dill - to taste Topping/sauce Onion - 1, diced Bacon - 1/4 pound, fried crisp Butter - 2 tbsp Creme fraiche Dill PERSONAL NOTE ✒️ Cepelinai or didžkukuliai are delicious dumplings made of potatoes and stuffed with ground meat. It is a very popular Lithuanian dish. The dough is made from a mix of grated raw potatoes and riced boiled potatoes with potato starch (both dry and wet). Make sure you save the wet starch that settles after squeezing all the liquid out of the raw grated potatoes (toss the water but keep the starch at the bottom). For the filling, I simply used ground pork with sautéed onions. Still, you can really use any kind of meat combination, cheese curds, mushrooms, etc. - it’s really up to you. Traditionally, you boil the cepelinai in water, but it can be a little tricky because they can lose their integrity. Just be gentle handling them. Also, you could steam them instead of boiling them in water - it works well too. Cepelinai are usually served with a topping of sauteed onions, crispy crumbled fried bacon, and sour cream (or creme fraiche). This is a hearty, delicious dish - 😋 Highly recommend!
