In a pot, cook the sugar over low heat until it caramelizes. Do not stir—just let it melt completely. Slowly add the water, then gently stir until well combined. Remove from heat and let the sugar syrup cool completely. 2. In a mixing bowl, add the glutinous rice flour and water. Mix until a smooth dough forms. Add the sugar and continue mixing until the batter is thick and smooth (refer to the video). 3. Add the cooled sugar syrup into the batter and mix well. Strain the mixture through a sieve to remove any lumps. 4. Pour the batter into cake tins lined with banana leaves. Cover tightly with aluminum foil and seal well to prevent water from dripping into the batter. (This helps keep the surface smooth and shiny and prevents the cake from turning soggy.) 5. Once the water is boiling, place the cake tins into the steamer. Steam over high heat for 30 minutes, then reduce to medium heat and steam for another 1 hour 40 minutes. 6. Remove from the steamer and immediately take off the aluminum foil. Let the cakes cool completely at room temperature. Once cooled, remove from the cake tins.
