" DAIGH BIRYANI BEEF " For this recipe we are going to need 1½ ts full salt, 2ts whole black pepper, dried plums / aaloo bhukhare, 1½ inch mace, ½ nutmeg, 2 L black cardamoms, 1½ inch cinnamon stick, 1 big bay leaf / 2-3 sm bay leaves, 1½ ts full cumin seeds, 10-12 cloves, 1½ ts full coriander powder, 1½ ts chilli powder, 1½ ts full hot crushed chillies and 12-15 green cardamoms. 2 whole garlic chopped, 2-2½ inches ginger julienne cut, 5 green chillies chopped, fresh mint, half lemon thinly sliced, 1 tomato thinly sliced and 3 md sized onions thinly sliced. We are also going to need Greek style yogurt / natural yogurt, 4 cups of qila excel long grain basmati rice soaked and 2 kilos marble meat beef To cook the rice in a rice cooker add the rice, 2ts full salt, 5 cups of water and a bit of lemon juice and set the rice cooker on cook. You can even cook the rice in a pot with quite a bit of water. Start cooking the thinly sliced onions in a pressure cooker with ½ cup oil until they are pink and add the beef, the dried spices, 2 whole garlic and fry, now add less than ½ cup of water. Mix it and then pressure it. Once the pressure releases itself dry all the water out then add 1 cup yogurt, julienne cut ginger and fry. When the yogurt has all dried up add the tomatoes, green chillies, mint and lemon and mix it, add kewra water 1½ ts. Take out half the rice from the rice cooker and layer the beef on the remainder of the rice then add the second layer of rice, try to cover the masala completely and some orange or red food colouring and set the rice cooker on cook and just leave it in there for approximately half an hour and once the half an hour has passed you can just mix the biryani and its ready to serve.
