Honey bee macarons are made with Italian meringue. For the shells you will need Almond powder 100 g Powdered sugar 100 g Yellow food coloring Egg white 36 g (You will get around 30 shells) For sugar syrup Water 25 g Caster sugar 80 g Meringue Egg white 36g Start whipping egg white when sugar syrup reaches 115C degrees. Add a tablespoon of caster sugar. When syrup is at 118C, pour it slowly into the meringue. Beat for about 4-5 minutes. First add 40 g of meringue into the almond paste. Mix it and then add 80g of meringue more and do the macaronage. Bake macarons in preheated oven at 150C degrees for 15 minutes. After about 7 minutes turn the trays around so that the baking is more even. After macarons are baked and cooled, you can start decorating them with the fondant and royal icing bees. To make the bees use a template to pipe a cute bee. For royal icing: 5 g meringue powder 15 g water Powdered sugar Add a small quantity of powdered sugar to the meringue and water mixture. Start mixing. Add one spoon at a time and keep mixing and adding until you get a thick texture. You can color the icing and thin the consistency with water or lemon juice when making the desired consistency. Use yellow fondant. Paint the hexagon shaped mat with yellow food coloring and then press the fondant in it. Fill the macarons with the desired flavor, assemble and decorate them.
