This sugar-free dry fruit laddu (or energy ball) is a nutritious, high-energy Indian sweet made without added sugar or jaggery. Ingredients (Makes ~12-15 laddus) Dry Fruits & Nuts: 1 cup Dates (Khajur), deseeded and chopped/paste ¼ cup Almonds (Badam) ¼ cup Cashew nuts (Kaju) ¼ cup Pistachios (Pista) 2 tbsp Raisins (Kishmish) 6-8 Dried Figs (Anjeer), chopped Binding & Roasting: 1–2 tbsp Ghee (Clarified Butter) Optional Extras: 1 tbsp Poppy Seeds (Khaskhas) 1 tbsp Melon Seeds or Sesame Seeds 2 tbsp Desiccated Coconut or grated dry coconut ½ tsp Cardamom powder Instructions Prep & Roast Nuts: Roughly chop the almonds, cashews, and pistachios. In a pan, heat 1 tsp of ghee and roast all the nuts on medium-low heat until they are lightly golden and fragrant (about 3-4 minutes). Roast Seeds/Coconut: If using seeds and coconut, dry roast them in the same pan for 1-2 minutes until they become aromatic and crisp. Remove everything to a plate to cool. Prepare Dates/Figs: Finely chop or grind the dates and figs into a coarse paste. Cook Dates: Heat 1 tbsp of ghee in the pan, add the date/fig mixture, and cook on low flame for 3-5 minutes, mashing with a spatula, until they become a soft, sticky mass. Combine: Add the roasted nuts, seeds, and cardamom powder to the cooked date mixture. Mix well while the mixture is still warm, allowing the dates to uniformly coat the nuts. Shape: Allow the mixture to cool for a minute or two (so it is safe to touch). Grease your palms with a little ghee and shape the mixture into small, firm laddus. Pro Tips Binding: Use soft, high-quality dates (like Medjool) for the best binding. Texture: Do not over-grind the nuts; keeping them chunky provides a nice, crunchy texture. Storage: Store in an airtight container. They stay good for 2–3 weeks at room temperature or up to a month in the refrigerator.
