When the fish is fresh, especially Spanish Mackerel (Thora Malu), and cooked with mild spices letting fish be the hero, Kiri Malu is one of our all-time favourites. The preparation of the Kiri Malu is easy, and the list of ingredients to go with is common and readily available in the pantry. Fish curry with coconut milk is ideal to be served with rice, string hoppers, bread, roti, kottu, godambara toti, noodles, etc. Ingredients Spanish Mackerel – 1 Kg 1Tsp ground pepper 2 1/2 cups of coconut milk 2 Tsp chilli powder 1 Tsp coriander powder ½ Tsp cumin powder ½ Tsp cumin seeds ½ Tsp mustard seeds ½ Tsp fenugreek seeds ¼ Tsp turmeric 2 Tbsp cooking oil 1 onion – sliced 4 cloves of garlic – thinly sliced 1 fresh chilli – sliced ½ thumb size ginger – chopped 2 pieces of garcinia A few curry leaves Process: 1. First, cut the fish into medium size pieces, wash and drain well. Then, add ½ Tbsp of salt, ½ Tbsp of ground pepper and ¼ of turmeric powder and gently mix well until the fish is coated well and set it aside. 2. Add 2 Tbsp of cooking oil and heat it up under medium heat 3. Once the oil is hot, add ½ Tsp of cumin seeds and ½ Tsp mustard seeds 4. Give a quick mix and add a piece of cinnamon (about an inch) 5. Add ½ Tsp of fenugreek seeds and curry leaves and fry for about 30 seconds till fenugreek is fragrant 6. Add 1 large sliced Asian shallots and give a quick mix 7. Add the 1 sliced fresh chilli 8. Make a well and add ½ a thumb size chopped ginger and 4 cloves of sliced garlic. Mix everything well 9. Make a well and add ¼ Tsp of turmeric directly onto the oil and mix well to combine 10. Similarly, add 2 Tsp of chilli powder, 1 Tsp of coriander powder and ½ cumin powder and mix well to combine 11. Set the spices to a side of the pan, and place the fish falt directly on the pan 12. Once the fish is placed, gently put the spices back onto the fish 13. Add 2 pieces of garcinia, cover the lid and cook for 2 min under low heat to absorb the spices and to cook the fish on its own liquid 14. Then, gently turn the fish over and give it another 1- 1½ min 15. Add 2 ½ cups of coconut milk and gently shake the pan to combine everything together 16. Add 1 levelled Tbsp of ground pepper, bring it to a boil on high heat simmer for about 4-5 min under low heat while gently stirring (to eliminate coconut milk curdling up) 17. At this stage, taste and adjust salt to your liking 18. The fish curry is ready to be served. Optional: About half a Tsp mustard seeds ground to a creamy paste can be added to the curry couple of minutes before taking off the stove Your support is very important for the growth of our channel.
