Ingredients: Potatoes, as needed Cornstarch, as needed Salt, as needed Ketchup, as needed Instructions: Peel the potatoes and cut them into thin strips. Soak the potato strips in water to remove excess starch. Bring a pot of water to a boil, then add the potato strips and cook for about 1 minute. Drain the water, then allow the potato strips to cool and dry. Transfer them to a container and freeze for about 2 hours. Coat the potato strips evenly with cornstarch by shaking them in a container. Heat a pot of oil to about 160℃ (320℉), then carefully add the potato strips. Fry them on medium-low heat for about 3 minutes until golden brown. Remove the potato strips and wait for about 1 minute before returning them to the oil for another 5 minute of frying. Drain the excess oil and sprinkle with salt while still hot. Serve with ketchup.
