Dressed Herring Salad My Dad’s Recipe / Селедка Под Шубой Как Ее Делал Мой Папа

This Dressed Herring Salad, or Herring Under A Fur Coat is also known as Shuba, and is a popular dish in Russia, Ukraine, Belarus and across the former USSR, where it is a traditional favourite for New Year’s Eve. Shuba salad has some historical significance, which you can read in “History on Your Plate” book which my mum and her photographer friend published during the lockdown in 2020. This Salad was my Dad’s favourite and he cooked it very well, so this is my attempt to recreate my Dad’s favourite dish using his recipe as I remember it! Ingredients: 3 salted herring fillets in rapeseed oil 1 onion 50ml white wine vinegar 2 potatoes 3 carrots 3 beetroots 80-200g mayonnaise to taste Method: Steam or boil beetroot, potato and carrots until tender (I usually do it the night before and steam Beetroot for about 40 mins, potato for 30-40 mins, carrots 25-30mins). Marinade onion for at least 15 minutes before assembling the salad. Chop the onion into small pieces first, then cover it with boiling water and white wine vinegar. To assemble the salad: 1. Chop the herring into small square pieces and lay it at the bottom of your salad dish. 2. Add marinated onion to the herring. 3. Grate the cooked and peeled potato over the herring. 4. Pour the left over rapeseed oil from the herring package over the grated potatoes. 5. Grate carrots over the potato layer. 6. Grate beetroot over the carrot layer. 7.
