Here's what you’ll need to make it: 6 eggs, extra large, room temperature 1 ¾ C of whole milk 2 cups of unbleached flour 2 teaspoons kosher salt 2 teaspoons black pepper 1 T fresh thyme, finely chopped 12 teaspoons of vegetable oil Here’s how to make it: 1) Whisk eggs and milk together. Then, slowly incorporate into flour, whisking until lumps disappear. Add salt, pepper and chopped thyme and whisk together. Cover and let stand for 30 minutes. 2) Preheat oven to 425°F. Pour 1 teaspoon of pan drippings vegetable oil into each cup of a large, 12-cup muffin tin. Place tin into hot oven for 5 minutes – oil should be almost smoking. 3) Carefully remove muffin tin from oven. Working quickly, fill each cup ¾ full with batter and return immediately to oven.
