Withering is the second phase in the process of making tea. While this step looks like very little is getting done, it is actually one of the most critical parts of the tea making process. As the tea withers it is undergoing a number of processes. The proteins and carbohydrates are breaking down to amino acids, oxidation is continuing. The leaves are wilting, becoming pliable, which will allow them to be shaped into balls, needles, and twists. Tea masters have to be monitoring not only the leaves but the air temperature and moisture as it will effect how long the withering process must go on. More moisture in the air means a longer withering process. As the tea leaves wither, they produce volatile compounds that get released as smell. Some tea masters will tell you they know when their leaves are at the correct place to spot withering based on the smell of the leaf.
