Flowers are blossoming everywhere in the garden, it’s a wonderful time to make my favorite dessert, Thai coconut rice ball which is both vegan and gluten free. This dessert is called kanom-tom ขนมต้ม which translates as “boiled sweet” in Thai. It consists of a soft dough made with glutinous flour and has a coconuty filling inside. This is my favorite Thai dessert because the sweet coconut filling is perfectly balanced with the bland dough that is wrapped on the outside. This dessert is cooked by boiling it. ---------------------------------------------- Thai coconut rice balls Ingredients 2 ½ cups glutinous flour (for each color) ** Another name for glutinous flour is sticky rice flour not rice flour. 1 ¼ cup water for kneading dough Optional: 4 pandan leaves blended in 1 ¼ cup water 2 cups desiccated coconut (or fresh grated coconut) ½ cup palm sugar (or coconut sugar) ⅓ cup water ½ teaspoon salt Directions ++++++++++++++++ To make coconut filling: o Dissolve palm sugar with water in saucepan. o Add grated coconut and salt. o Over medium low heat, cook coconut and sugar until almost all the liquid is absorbed. Stir continuously to prevent burning. Turn off heat. o Set the coconut filling aside for it too cool down. ++++++++++++++++ To make dough: o Add water (or pandan juice) with glutinous flour and knead to form a dough. If dough is too wet, add more flour. If too dry, please add more water. You can also add few drops of food color if desired. o Cover dough with damp cloth to prevent them from drying. +++++++++++++++ Make your coconut rice balls: o Form coconut filling into a ball by using one hand and firmly squeezing on it as you shape them into a ball. o Take some of your dough and put your coconut filling on the dough and wrap it up into a ball. o In a pot, bring water to a boil. Lower the heat and slowly add your coconut rice balls. Once cooked, they will float to surface. o Scoop out cooked coconut rice balls. Roll them in a dish of grated coconut to prevent them from sticking together. ------------------------------------------------------- Tips: This dessert is best eaten at room temperature. To store: If not eaten within two days, please put coconut rice balls in a container with lid and put in fridge. When you take out of fridge, they will be very hard.
