How to make Mango Crêpe Roll Cake. This yields six 8-inch crepes. You can double this recipe too :) Here's what you'll need: 2 tbsp sugar (25g) 2 large eggs 2 tbsp melted butter- salted (25ml) 1 cup milk (240ml) 1 tsp vanilla extract (5ml) 3/4 cup cake flour (85g) FILLING: 1 cup heavy cream (250ml) 2 tbsps sugar (25g) FRESH MANGOES-cubed 1. In a bowl, mix sugar, eggs, melted butter. 2. Add milk and vanilla. Mix well. 3. Sift in flour, mix until smooth. 4. Strain the mixture. 5. Over medium heat, wipe tawa pan or griddle with a bit of oil. 6. Pour about 1/4 cup of batter. Cook until the top part is set. Let it cool down completely on a rack. 7. For the filling, beat cream and sugar until thick. 8. Assemble 3 crepes at a time, overlapping each other with smooth side down as shown in the video. 9. Spread filling evenly, place cubed mangoes.
