Ride Safe, Harry INDIAN CHICKEN Coconut milk, curry powder, garlic, and ginger create a warmly spiced, full bodied broth. Add tender chicken, broccoli and rice and you’ve got a surprisingly easy sumptuous one-pan dish great for any camping trip. SERVES: 1-2 PREP TIME: 10 minutes COOK TIME: 20 Minutes 1 Boneless Skinless Chicken Breast cut into 1-inch pieces 1 Tablespoon of Olive Oil 1 Small onion diced 1 Garlic clove minced 1 teaspoon of curry powder ½ teaspoon of ginger 1 head of broccoli florets ½ cup light coconut milk ½ cup no-sodium chicken broth Black Pepper to taste ½ cup pre-cooked rice Season chicken with pepper. Heat oil in skillet over medium-high heat; add chicken and cook until slightly browned. Using a slotted spoon, transfer chicken to bowl and cover. Leave drippings in pan. Reduce heat to medium-low. Add onion, garlic, curry powder and ginger to pan. Cook until fragrant. Add coconut milk, chicken broth and broccoli. Cover and simmer until vegetables are cooked.
