We are back with another wonderful video in collaboration with the Milano Cortina 2026 Winter Olympics. We meet farmer Edeltraud who shares her recipe for Schlutzer, or mezzelune, ravioli-type filled pasta with a distinct half-moon curve. She fills them with ricotta and spinach and sprinkle some pungent fresh cheese called graukase, along with some chives. Delicious! Here's her recipe: For the dough: 500g 0 flour 2 tablespoons rye flour 1 tablespoon corn oil a pinch of salt 2 eggs 120ml warm milk For the filling: 400g ricotta 300g cooked spinach 30g chives salt To serve: butter graukase cheese chives Buon appetito!
